Finché un giorno… ebbene sì, sonnecchiavo davanti alla tv accesa quando un simpatico ragazzo inglese ha “bucato” lo schermo preparando una salsa con pomodori maturi, basilico fresco, spezie, tanto amore e passione che mi hanno letteralmente entusiasmato.
La preparazione la chiamava “ketchup”, ma i meravigliosi profumi dei prodotti di grande qualità e semplicità che adoperava, li potevo sentire anche dal mio divano.
E’ stata una folgorazione, dovevo in ogni modo provare a ripetere quella ricetta; sono andato subito nel mio orto dove avevo disponibili proprio quelle primizie, le spezie non le ricordavo esattamente perché questo ragazzo le aveva elencate all’inizio della puntata mentre ero ancora sonnecchiante, ma avevo in dispensa un misto di 12 spezie, che io chiamo “curry“, che avevo assemblato e triturato tempo prima, ma mi è sembrato che potesse andare bene. In più ho inserito qualche bacca di ginepro che adoro.
L’ho eseguita così, a memoria, ma anche con un po’ d’intuito e personalizzazione: una meraviglia!

Anche questa è una dose massiccia, ma trovo che le bottigliette da 250 millilitri siano una simpatica idea regalo, contribuendo così alla diffusione di prodotti casalinghi e genuini, facili e gustosi, rimpiazzando i disgustosi e malefici sottoprodotti industriali.

Tagliate finemente le cipolle e l’aglio.

Mettetli in una grossa pentola con l’olio e fate stufare lentamente. Aggiungete le spezie, il peperoncino, sale e pepe e fate scaldare.
Aggiungete i pomodori tagliati grossolanamente e la passata, l’aceto e lo zucchero (nella foto si notano due diversi tipi di zucchero, quello di canna e il Muscovado, più aromatico, scuro e grezzo).
Prelevate solo i gambi del basilico, inseriteli nella pentola e fate prendere il bollore; abbassate la fiamma al minimo e cuocete senza coperchio per 30-40 minuti. Assaggiate e regolate di sale e pepe.
Se il tutto soddisfa togliete dal fuoco, aggiungete le foglie del basilico spezzettate a mano,
girate e frullate il tutto nel mixer o con il mini pimer.
Passate il tutto al setaccio premendo bene con il bordo del mestolo.
Nel frattempo sterilizzate le bottiglie scelte, considerando che con questi ingredienti si ottengono circa 2 litri di prodotto finale. Mettetele su di una teglia, adagiate senza che si tocchino e mettetele in forno a 170 °C per 25 minuti.
Mescolate con cura e imbottigliate subito, quando sia le bottiglie che la salsa sono ancora caldi; chiudete e riponete in luogo buio fino a 6 mesi.
