Da Saint-Tropez arriva questa favolosa Tropézienne!
È un dessert molto apprezzato in Francia dal 1955, quando in occasione delle riprese di un film di Vadim a Saint-Tropez, Brigitte Bardot scoprì questo favoloso dolce e lo rese famoso. Ma è di origine polacca, importato da un pasticcere che possedeva la ricetta originale della sua famiglia.
Prevede una classica pasta brioche e una crema al burro aromatizzata alla vaniglia, acqua di fiori d’arancio e un liquore.
Ho modificato leggermente questa ricetta arricchendo la brioche con vaniglia e buccia di arancia, e ho alleggerito la crema facendo una semplice “chantilly”, come la chiamano in Italia, ossia una crema pasticciera alla vaniglia e della panna montata, ma ugualmente con aroma di acqua di millefiori; ho arricchito il tutto con favolose amarene sciroppate.
Morbidissimo e profumatissimo.
Solo una precisazione sulla crema: come ho scritto, in Italia chiamano “chantilly” una crema pasticciera alleggerita da panna montata (alcuni la chiamano anche crema diplomatica), che troviamo come farcia di bignè e torte, ma in Francia la chantilly è solo panna montata con zucchero e vaniglia. Qui ho dovuto scrivere impropriamente chantilly ma solo per le pressioni che mi fanno tante persone che non capiscono la differenza.
- 500 g di Pasta brioche
- 1 dose di crema pasticciera
- 250 g di panna fresca
- 1 + 1/2 cucchiaino di acqua di millefiori
- q.b. di amarene sciroppate Crispo
- 40 g di farina Petra 5 del Molino Quaglia
- 40 g di zucchero a velo
- 40 g di burro freddo
Rivestite una teglia da 26 centimetri di diametro con della carta da forno. Stendere la pasta brioche in un cerchio di 26 centimetri di diametro e poggiatela dentro lo stampo.
Fate lievitare per un paio di ore a 22 °C o finché raddoppi il volume, coperta da pellicola trasparente non a contatto.
Preparate il crunch mettendo nel mixer la farina, lo zucchero e il burro, azionate velocemente fino a ottenere una granella. Conservate in frigorifero.
Accendete il forno a 200 °C.
Prima di infornare la brioche distribuite il crunch uniformemente sulla pasta e infornate subito per 30-35 minuti. Fate raffreddare. Tagliatela in due nel senso orizzontale ma lasciate la base nella teglia con tutta la carta.
Fate sgocciolare le amarene.
Inserite l’acqua di millefiori nella crema, montate la panna e amalgamatela bene e delicatamente alla crema. Spalmatela sulla base di brioche, distribuite le amarene a piacere e coprite il tutto con la calotta di brioche. Conservate in frigorifero.
